Japanese food anyone :)

Last night I made my first own sushi :) As His Hubbiness™ was off with former schoolmates to have some fun on his own I was puttering around at home and was making sushi for myself (His Hubbiness™ is the kind of man who doesn't anything he doesn't know and has never tasted as a kid *sigh*).

I had bought sushi maker sets and all and Nishiki rice and lookee here, it worked just beautifully :)

clockwise: bowl of self-made kim chi, rice with sesame seasoning and cucumber cutouts, gari (pickled ginger), soy sauce and wasabi, a plate of maki and nigiri sushi

I made the nigiri and the maki roles, using surimi sticks, fresh salmon & tuna, octopus and gambas. It was very yummy and I had enough to have a little midnight snack when His Hubbiness™ came home and wanted a snack as well (sans Sushi).

And they tasted yummilicious. Better than the store bought variety. I think I will make my own sushi from now on, this way I can also experiment a bit. Perhaps even make sushi with meat for His Hubbiness#&153; to taste :) He doesn't like fish, esp. not raw.

I don't like fish so much myself, and some years ago, when I tried my fist sushi, I was so suspicious... I even sniffed the stuff before making a first bite! I think it looked very funny. But now I really love sushi and the way Japanese cook fish (raw or not). I love to eat in Japanese restaurants in Moscow, the only problem is that they are quite expensive here.

Over here it is very expensive too, though we have a couple of sushi take away shops :)

Here we have this kind of "take away" sushi service only in cafe or restaurants, so prices are the same. :)

Today I decided to pet myself a bit and to have a lunch in Japanese cafe: the meal was tasty and healthy, but the bill was about 23 Euro... It's a pity, I can't spend this kind of money for lunch every day. :)

WOW! It looks amazing! Was that your first try at making it? Great job! I've made sushi with friends before, but never on my own. And you made the kimchi yourself? I've tried making it a couple of times but it never seems to pickle properly. Do you know any secrets to making it? Mine just ended up really bland!

I don't make anything special, I only follow this recipe
http://www.pyongyang-metro.com/kimchi/ and put the kim chi for the first two days in a coll, dark place, stirring it twice a day and then put it in the fridge for about 5 days before eating it.

Over here too, esp. that which is made at home by the shop owner.

The link is quite good, they have pictures too, which helps so you know how the stuff has to look like :)

I made my own Sushi some times now but I'm not really good at cutting the fish so your nigiris look waaay better than mine.

BTW: Would you mind sharing your kim chi rezept with me?

Yup my first try :) I have molds (Förmchen) for the nigiri and I learnt how to cut up fish and meat when I was a kitchen help in a restaurant during uni.

I LOVE kim chi. Ppl told me you either get addicted to it or you don't ... well, I got addicted. We have something similar over here, though it is not hot but sour. We cut the cabbage in fine shreds and put it in vinegar, when it is pickled enough you can eat it either raw or heated. Yummy!

Well there are sushi molds for little money on available on ebay if he doesn't want to roll. And nishiki rice is easily bought. It is just a bit of a bother to wash the rice beforehand.

I think Japanese shops also carry already cut up sushi fish, just have a look and I'm sure your husband will love to make his own sushi :)

Wow good job!! Everything looks really good! I really love making sushi. :) I haven't tried making kimchi yet. Pretty much only my dad likes it at my house. I've only tried it once when i was a kid and it was just too spicy. :/ Though recently i've tried a kimchi but with cucumbers and it was really good.

Now this is a thought, I have to try it with cucumbers then :)

Well you can control the grade of hotness. If I want to make a kim chi that is not that hot, I leave out the kim chi sauce and only spice the cabbage with a bit of chili powder and hot red pepper sauce. For more reddish colour I add in sweet red pepper powder. THis way, it looks like *normal* kimchi but it isn't so hot :)
